This is the Flag Ship wine from the Tynan’s View home block; we do not release a reserve every year. In fact we tend to achieve reserve status every 3 years.
Our reserve Cabernet comes from a small portion of the vineyard which we treat carefully from careful hand pruning through to harvest (always at night) and then in the winery where a selection of the best grapes are streamed and processed using traditional method and open fermentation. Finally a careful regime of oak rotation for up to 18 months using new French barriques and finished off in some older (2 year) barrels. When winemaking is finished the wine is bottled and laid-off for at least 6 months before release.
The finished product is a wine that is elegant and almost stylistically French. It matures gracefully in bottle over many years demonstrating superior drinking even into 10 years in the cellar.
Characteristically this wine shows blackcurrant berry flavours and oak element on both palate and aroma. Good structure and firm tannins allow for a long lingering finish. When this wine is young mint flavours prevail but with prolonged cellaring these are suppressed and hints of tobacco emerge.

Cellar carefully away from light and keep at constant temperature of between 11-15°C.
This wine will develop additional style and elegance in the bottle for at least 5 years and then age gracefully for another 5 years.
